After harvesting some beets and carrots the other day, I decided to make a yummy salad! I steamed the beets so the skin was easy to take off and let them get nice and cold in the fridge first. Chopped up some carrot and peas and added them, and some Pac choi. All of this atop some lettuce from the garden- Yum!
The salad dressing is from Trader Joe’s and is very yummy! It’s called Champagne Pear Vinaigrette. I’ve been using this to top my sautéed, beet greens as well- very delicious! A nice half a ham sandwich on whole wheat bread with organic cheddar cheese that comes from grass fed cows- and you wouldn’t believe the difference in taste! Even the mayo used is better for you! We finally found a mayo that has no soy bean oil in it- which is top on the list of GMO foods and it’s in everything! All of this comes from Trader Joe’s. Yum!

Yum seconded here as well. I love beets but they are such a pain to peel. Your lunch sounds perfect. The cheese sounds wonderful too.

Lynn- If I could send you some, I would! It was indeed a yummy salad.
Frances- I wash the beets just enough to get the dirt off and clip the tops leaving about an inch of the stem, then I steam them a bit and the skin comes right off. Found that on the internet because I had no idea how to make them :)!
I must be the dissenter. I'm not a beet fan. I even throw away the ribs to my chard because they taste too much like beets. I do however envy your carrots. I could use some color in my salads. I've been eating a homemade garlic scape dressing that is yummy so that helps. Carrots would be nice too. Maybe soon.

Another vote for the Trader Joes Champagne Pear Vinaigrette! It is yummy! I have to try it on beets -- if they ever get going, that is!
